"Holidaying" and "Instant Result" should be the same.
BUT bear in mind that officially, only the FM Touch version supports the "Instant Result" feature and the full game version doesn't support the "Instant Result" feature and in the full game version you can only get the "Instant Result" by using custom skins, so it's hard to say anything about the reliability of "Instant Result" when it comes to the full game version.
But in the FM Touch game version "Holidaying" and "Instant Result" 100% should produce the same result.
The instant result gives your manager "credit" for managing the game. Holidaying gives your assistant manager "credit". If you holiday an entire season and win the league your assistant manager might win manager of the year. However, you would win manager of the year if you did instant results instead.
Would be nice to have option between IR and playing matches like "very fast" only comentary, which takes you trough game much quicker but still gives you time to react.
Not too hard to test although I haven't seen anyone do it. Take a sample of a single game played like 200 times each for different scenarios: holiday through, instant result and maybe even watch. I suspect the first two options should be the same, less sure about the 3rd.
