What do I have to tick or untick to get my voice back?

It only counts official matches, not friendlies.

The only benefit is that, if you don't, your assistant manager might say things that lower your player's morale. Other than that, no harm at all.
Players available for U23 & u18. Do you guys have a general rule for this? I set all to 45 mins UNTIL FIT. Is there a better approach??
I like to select players that are topping the training in each game. I reckon it encourages the players to train well.
